Blueberry Cheesecake Stuffed French Toast

This Blueberry Cream Cheese Stuffed French Toast recipe is such a simple and delicious way to take your breakfast up a notch!
 I made this blueberry cheesecake stuffed french toast on a whim the other day and posted it on Instagram and all of you were begging for the recipe. So here I am, not disappointing you as I often do. Heh. Heh. 

This is the perfect easy but decadent breakfast for a day like the day I'm having today. I've been deep into my spring cleaning. I know, it's September. But having a baby in March kind of put a wrench in my overly ambitious spring cleaning plans. But not to worry, I saved my to-do list and am now finally getting to it. 

 
 
Yesterday I cleaned out my pantry and threw away at least 2 dozen empty spice containers and compiled dozens of almost empty boxes of fettuccine. When I opened my kitchen cabinets an avalanche of tupperware burst upon me (or, more accurately, empty yogurt and cool whip containers). Got rid of about 40 of those and then moved on to the next cupboard where I found 4 opened containers of salt, 6 boxes of cocoa powder, and a bag of coconut which was unzipped and upside down. Chocolate chips were scattered like stars among the coconut flakes and stray muffin liners. 

So yes. It's been a week. And it's only Tuesday.


 
 
This is exactly the type of week that calls for blueberry cheesecake stuffed french toast. It's just about as easy as making a grilled cheese, but has all the decadence this hard working momma deserves. 
 
I used Udi's gluten free bread for this recipe, but if you don't need it to be gluten free, I would recommend using any fluffy, white sandwich bread. Sourdough is great for french toast too, but I don't think it absorbs the egg quite as well. But any bread will work for this recipe!

  
 
Another thing worth noting is that frozen blueberries actually work great for this recipe! You will definitely want to warm them up a bit in the microwave first. Then put the berries on along with all their juices. 

If using fresh berries, it's also worth warming them up a bit first in the microwave too. This way they will be heated through enough to release their juices while your french toast finishes cooking.
 
 
 
 
 I  suppose blueberries are not really the most seasonal ingredient for a recipe right now, but not to fear. I am planning to make you some nice pumpkin spiced recipes later this week... if I finish my spring cleaning.
