I was very wary when titling this post. Last time I posted a coffee cake, I got multiple commenters and emailers saying, "Excuse me, but where is the coffee in this coffee cake recipe? I have read it through multiple times and I just cannot find the coffee. Please help!"
No, you are reading that correctly, folks. This coffee cake, like pretty much all coffee cakes I've ever had, has absolutely no coffee in the recipe! Shocking, I know. But I do hope you will drink a cup or several of coffee while you are devouring it.
Really though, I shouldn't make fun of you wonderful commenters.
But while I'm already on a roll, can we just talk about the people who ask if "this chocolate chip cookie recipe will still turn out the same if we leave out the chocolate chips" (to whom I must answer, "What do you live for?"). Or how about the people who ask in earnest if cupcakes are meant to be served as a side dish or dessert?
I'm not even joking when I say, these kind of comments are what make blogging worth it.

ReplyDeleteThis is an amazing coffee cake. I've made this several times and get so many compliments and requests for the recipe. I added chopped pecans to the streusel for a different flavor....loved it! THANK YOU!
ReplyDeleteDo you think it would work to bake this in a Bundt cake pan? If so, do you know how you would adjust the cooking time?
ReplyDeleteI would be a little nervous about a bundt pan that it wouldn't pop out of the pan well, but you could try! I think the bake time would be similar but I would go by a toothpick test!
DeleteI made this gluten free- subsituted a mixture of coconut flour and all purpose gluten free flour for the flour. The only thing I would change is to add more cream cheese mixture in the middle, that layer seemed a little thin. It could be that it was a dryer cake b/c of the coconut flour, the next time I will try it with almond flour. Thanks for the recipe!
ReplyDeleteTo make gluten-free, the best bet would be to substitute 1-1 gluten free flour mixture. It's not advisable to use coconut flour or almond flour as they are not intended to be subbed 1-1.

ReplyDeleteI love this. It’s deliciously yummy! I let it cool and popped it in the fridge for a bit before I cut it. It is not easy to cut in perfect squares. It falls apart. Any suggestions for presentation? Thanks.

ReplyDeleteThis is FABULOUS. I've been searching for years for a really great coffee cake recipe and this is The One. I used some little windfall apples from a tree that fell over and they worked beautifully. I can see making this with pears as well (I have both pears and apples in my garden) I followed it exactly and the cream cheese layer is delightful and there's plenty of streusel topping (which is really sweet and that's fine) which gives it good crunch and doesn't get soggy. I'll be making this for years to come. it's my go-to now. My husband just wanted to keep eating and eating it and so did I. great with coffee/tea and also warm with vanilla bean ice cream

I accidentally messed up and used 1/2 tsp of cornstarch instead of 1/2 tsp of baking powder for the cake portion (I didn’t realize it until it was too late) and it still came out tasting awesome! The top is crunchy and sweet which pairs perfectly with the cake. I didn’t have an 8x8 pan but I used two silicone Epicure baking pans and it came out as two loaves. Will definitely make again!

ReplyDeleteI have made this numerous times and sooooo good, tomorrow I am going to try this exact recipe but with raspberries and blueberries to see if it will be as good or not.
