Have you ever wished you could have a huge, luscious, rich, gooey, chocolatey brownie for under 100 calories? If you just screamed yes and began licking your computer screen then A. Stop, that's disgusting. B. It may be time for you to chill out about the calorie counting, but if that's what floats your boat then cool beans because... C. Today is your lucky day!
Excuse me for being a little repetitive with the zucchini bar thing, but I thought you might want to make these while you've still got all those giant zucchinis sitting in your garden. Because yes, zucchini is the secret ingredient in these brownies. Not only are they completely void of butter or oil, but they also contain both fruit and veggies and they can even be gluten free. You're welcome. Good day.

ReplyDeleteYou have squeeze all the juice out of the zucchini. Idk why that very important step wasn't in the recipe instructions. Hope that helps π

ReplyDeleteThese were delicious, i heeded the above comment to drain the zucchini first (I wrapped them in a dish towel and squeezed to drain) and added chopped walnuts and chocolate chips.
ReplyDeleteI’m assuming that 87 cal is without the frosting is that correct? If so how many calories with the frosting are you supposed to squeeze all the liquid out of the zucchini?
ReplyDeleteI added it up, it came to 120 cal per bar without icing so I'm not sure where 87 is coming from. Oat flour is more cals too

ReplyDeleteMade these today and they were a disappointment. Very mushy and an odd taste. Also, I cut the bars into 18 pieces and they’re still 118+ calories for each serving according to two different calorie trackers. Was hopeful to find a good zucchini brownie recipe but this isn’t it!
ReplyDeleteThere is no way you can get this to 87 cals a bar with 15 bars. I added all the ingredients and broke it down. Does not work out at all
ReplyDeleteGreat recipe! I looked at the comments but with my own calculations, the calories per bar (15 bars) is accurate with all the same ingredients. The brownies came out great, moist, applesauce-tasty and satisfies the late night sweet cravings. I loved turning zucchinis into desserts, thank you!

ReplyDeleteThese are so good! My husband is diabetic and first thing he said was I can eat these without feeling guilty. I made a frosting/glaze by melting some chocolate chips adding peanut butter powder and a little bit of half and half mixed in once I melted the chips. Whisked it all together and spread on top while warm. It was a hit. Thank you again.
ReplyDeleteThese were really good! Definitely more of a snack cake texture than brownies but either way will be making again. I used granulated sugar and a little honey because I didn’t have brown sugar and also added a small bit of instant coffee to help bring out the chocolate flavor!
