BLT With Roasted Red Pepper and Garlic Smashed Avocado

I have been missing it for months, you see. It was trapped in a deep secret canyon in the depths of the couch cushions and was having a party with the loose change, dead batteries, guitar picks, monopoly money, scraps of wrapping paper, dirty bandaids, and spectrum of crayons that reside therein.
Now I can once again listen to music wherever I please. I can instantly be notified every single email I get at the exact moment I get it. I can find Waldo, help Spongebob feed his hungry customers, bring my SimCity back to life, and launch angry birds at evil green pigs. All of these things are clearly of paramount importance, so I'm having a sandwich to celebrate their reemergence in my life.





Now this is kind of a throw-all-your-delicious-scraps-of-leftover-veggies-and-things-between-some-bread sort of sandwich. At least, that's how it came into existence. Just a grilled swiss cheese sandwich with bacon, tomato, and spinach. For a dressing I mashed up some avocado with some red bell peppers and garlic which I fried up on the stove and added some smoked paprika for a final touch. It's simple enough and you can probably whip it up in about ten minutes.


BLT With Roasted Red Pepper and Garlic Smashed Avocado

2 slices of bread
6 pieces of cooked bacon
2 slices swiss cheese
1/4 of a red bell pepper, finely chopped
1 clove garlic, finely chopped
1/2 of an avocado
1/4 to 1/2 teaspoon smoked paprika
1/2 teaspoon lemon juice (to prevent the avocado from browning)
Tomatoes
Spinach (or lettuce)

Put the garlic and pepper in a pan on the stove with a few teaspoons of olive oil. Cook until they're softened and browned. Mash up the avocado in a bowl with the lemon juice, paprika, and some salt and pepper. Add the pepper and garlic. 
Put the cheese and bacon between the bread and butter both sides. Cook on medium heat on the stove until the cheese is melted and both sides are browned. Top with spinach, tomato, and avocado mixture.

  4. I was so happy the day I baked some cornmeal and flax into my bread, toasted some and ate it with mashed avocado! Bread and avocado were always meant to be together.
