Cheddar Bacon Biscuits


Before today, I had never made a biscuit in my life.

It's true. I hang my head in shame.

Sure I've popped my share of good ole' reliable Pillsbury frozen buttermilk biscuits in the oven. They are quite delicious, in fact. But there's not much you can do with a frozen biscuit. I mean, they're sort of boring. Honey and jam can only entertain me for so long. Besides, I think I scare the children when I have to maniacally hack them apart with an ice axe when they get stuck together in the freezer .

 

So, I decided that today was the day that I was going to take this brave new step in my life. And I wasn't going to mess around with the preliminaries. I got right to the good stuff.

Bacon. Cheese. Garlic. Chives. Yes.

So, I simply asked my sister, Nemo, about the method and then looked up a recipe which I didn't end up following, and there you are. My very first batch of biscuits.

I think I maybe made the dough a bit too wet, but they were still delicious.

Clearly Piggie thought so anyways...


Cheddar Bacon Biscuits

3 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 sticks of cold butter, sliced
1 cups buttermilk
1/2 cup chopped chives
1 cup shredded cheddar cheese
2 cloves garlic, minced
5 pieces of bacon, cooked and crumbled

Preheat oven to 375º.
Mix together the flour, powder, and salt. Cut in the butter with a pastry blender, with your fingers, in the food processor, or in a stand mixer (I used a pastry blender) until the butter is about the size of peas. Add the rest of the ingredients and mix with a rubber spatula just until combined. Don't overmix.
Drop by about 1/2 cup onto baking sheets to make about 11 biscuits. Flatten slightly and top with a little more cheddar cheese if you want to. Bake them for about 30 minutes or until golden brown. Brush the baked biscuits with melted butter and top with fresh parsley if you wish to be awesome.


Eat them for breakfast. Eat them for lunch. Eat them for dinner. You will be happy.

  2. Oh, yummy! I can't wait to make these! Do you eat them alone or on the side of something? I'm thinking on the side of a pasta dish or something...

  3. We had them with a simple pot pie filling, but they would be great with anything, or even alone. :)

    I was halfway through making the dough before I realised...I have no idea what to set my oven to :s
