Loaded Potato Salad


I hate to rain on all of your magical parades of ignorance, but this Father's Day, my dad wins. He wins every year actually.  How he can keep his sanity with such a savage lot of hooligans living under his roof is a mystery, but the fact that he manages to be such a perfect, hardworking, loving, selfless patriarch on top of that is nothing short of miraculous.  So I would like to take this moment to show my appreciation by dedicating this big, colorful, mouthwatering bowl of potato salad to my dad, the bestest daddy in all the land.



Okay, so he's allergic to milk so I had to make him his own without cheese or sour cream, but hey... It's the thought that counts, eh?

Loaded Potato Salad

8 cups of cubed red skin potatoes
1 package of thick-cut bacon
1 clove minced garlic
1/2 teaspoon pepper
1 teaspoon salt
1/4 teaspoon cayenne pepper
A few tablespoons of olive oil
1 1/2 red bell peppers, diced
1 white onion, diced
3/4 cup chives, cut up
1/2 cup grated parmesan cheese
1 cup thinly grated cheddar cheese
1/2 cup sour cream
1/2 cup mayonnaise

Preheat the oven to 450ยบ.
Line a cookie sheet that has a rim with tinfoil. Combine the potatoes, garlic, bacon, salt, pepper, cayenne pepper and enough olive oil to coat and bake on the sheet for about an hour or more until the bacon and potatoes are crispy.
Add the rest of the ingredients and refrigerate until ready to eat.


By the way, in case you didn't notice that my pictures suddenly look about five trillion times better quality, it's because I just got a new camera. I got the Canon EOS Rebel T3. I love it. It's simple to use, takes really nice pictures, and was a decent price. So, I'm happy. But what's new. :]

  4. This was so yummy! My eldest daughter insisted that we make this. I was a bit skeptical. I mean putting perfectly good roasted potatoes in POTATO SALAD?! But she said it was fabulous so we kept going. This sounds weird but it is true. The flavors keep popping out as this is gnashed around in your mouth. It's amazing.
