This quick and easy stuffed chicken only has 6 ingredients, is ready in under an hour, and is the perfect meal to impress!
The other day I suddenly got into the mood to post something for you guys. I had no idea what it would be until I opened the fridge I spotted a jar of sun dried tomatoes. Then I knew.
Less than an hour later, we were feasting upon this glorious stuffed chicken.
When my brother got home from school later that day, I was sitting in the living room editing these photos when suddenly I heard from the kitchen...
"Who did this?!"
A pause.
"Who has done this wonderful thing?!"
Another pause. Then, mouth full, "Who made this chicken?!?!?!"
I smiled to myself knowing that I had struck success.
This chicken was seriously easy to make. It only needs a few ingredients, the star of which is the sundried tomatoes. Usually I'm too cheap to buy sundried tomatoes, but the other day at the grocery store I saw this big pack of "freeze-dried sundried tomatoes". They were just vacuum packed without any oil or anything which didn't look too awesome, but they were only about $2 so I decided to get them anyway.
As I had anticipated, they weren't really so good right out of the package, but I chopped them up, put in the in a jar with herbs, olive oil, and garlic, and let them soak for a while. After that they were awesome, so I went back to the grocery store and got about five more packs and jarred them up.
Long story short, brace yourselves for a ridiculous amount of sundried tomato recipes. I can't be stopped.
By the way, you may have noticed that I posted this post about six hours earlier than I usually post anything. That's because I'm trying to get on Germany time since I'm going to Berlin TOMORROW(!!!!!!!!!!). I just don't want to waste my time there being jet lagged, so I've been slowly inducing jet lag over the last couple of days. Nobody seems to believe me that I can do it, but, well... I can. Doubters, prepare to be amazed when I land in Berlin bright eyed and bushy tailed and ready to rumble.

ReplyDeleteYou can use goat cheese also. Chicken only needs to cook 25 min. total.

ReplyDeleteYou can buy Sun dried tomatoes already in an Italian marinade. They come in halves or Julienne cut. I have used the brand Bella Sun Luci and Tantillo. They are so good and sweet I use them to cook with all the time.

ReplyDeleteI found this recipe on many different websites and they each said to bake the breasts for approx 20 minutes. I haven’t tried it yet but will follow those instructions.
DeleteMade this for tea 23 / 05 / 23 the only thing I changed was the marinade as I couldn’t find the one stated in the recipe so I used Sundried cherry tomato with basil sauce I cooked in the oven on gas mark 4 for 50 minutes because the chicken breast were very big and thick and this dish came out perfectly cooked me and my son loved it definitely a keeper and will be making again. I served it with a tossed salad and some baby potatoes absolutely delicious

ReplyDeleteI’m looking for simple recipes with a lot of flavor that are not super unhealthy. This seems to fit the bill. I ended up with super greens which is spinach and Swiss chard so I’ll use that. I also don’t have feta but will use Gorgonzola instead. Wish me luck! I’ll update everyone after I make it tonight.

ReplyDeleteChicken breast is very easy to dry out even when you don't intend to! What I do religiously with any meat (not seafood) is I marinade it in milk, buttermilk, or even kefir or yogurt a few hours before I am going to cook it. It really makes such a huge difference in any poultry, pork, or beef that you cook. I hope this helps you!
Delete27 stars for this recipe! It’s really delicious. I added some fresh chopped basil with the spinach and melted a combo of the leftover cheeses under the broiler for just a few minutes until cheese was brown and bubbling. Sublime. Thank you!
